A summer dessert plus a bonus recipe

My garden is really loving this rain. Last weekend I was in my green beans, and thinking they were done producing for the season, but I got a surprise. They are not. I just cooked all the green beans I picked, but I have to say I’m a little disappointed in my tomatoes and cucumbers. Hopefully this rain will turn them around. I was able to can a few pints of tomatoes, I was hoping for more, but there’s still time, and they do look promising.

With all the gardening, flowers and the grass, I still have to find time to make some sort of dessert. This week’s recipe seems to fit into that busy schedule.

When I look at this little treat it just screams summer to me. It reminds me of the Neapolitan ice cream we would have as kids on hot summer days. The hint of strawberry preserves in this just kicks it up a notch.

Neapolitan Crispy Bars

Ingredients

1 package (10 ounces) large marshmallows, divided

3 tablespoons butter, divided

2 cups cocoa Krispies

½ cup miniature semisweet chocolate chips

4 cups Rice Krispies, divided

¼ cup strawberry preserves

Directions:

1. In a large saucepan, combine a third of the marshmallows (about two cups) and one tablespoon butter. Cook and stir over medium-low heat until melted. Remove from heat, stir in Cocoa Krispies and chocolate chips. Press into a greased 11×17 inch dish.

2. In a saucepan, combine a third of the marshmallows and 1 tablespoon butter. Cook and stir over medium-low heat until melted. Remove from heat: Stir in two cups Rice Krispies. Press into dish over the chocolate layer.

3. In a saucepan, combine remaining marshmallows and butter. Cook and stir over low heat until melted. Remove from heat; stir in preserves. Stir in remaining rice Krispies. Press into dish: cool. Cut into bars.

Bonus:

A reader sent me this following recipe. I tried it this weekend. It’s very good. It’s a very old recipe and tried and true. I made it with black raspberries and I have to say I sure enjoyed it. It reminds me of eating at grandma’s house.

The only thing I would have changed was to have a big spoonful of ice cream to put on top of it right out of the oven. But I didn’t have any ice cream, so I will have to make it again and add that ice cream.

Berry Cobbler

½ cup sugar

1 cup flour 2 teaspoons baking powder

2 Tablespoons butter

½ cup milk.

Mix the above ingredients and place in a buttered 9X9 baking dish.

2 cups berries or any fresh fruit

1 cup sugar

Mix well and pour over the batter

Add 1 cup of boiling water over the top of all of it

Bake at 375 degrees for 45 minutes.
