Delightful cookies without the baking

When you’re looking for something sweet, easy and convenient, it’s so nice just to grab a cookie. But in this heat who wants to bake?

These little delightful cookies are an easy, quick treat for just this time of year. I love the brown sugar and the coconut flavors in this sweet treat.

They remind me of the candy that we used to get called “haystacks.” They too had coconut and brown sugar in them. They were a special treat that we had around Christmas time many years ago.

This recipe only makes about two dozen cookies. It’s easily doubled. They tend to go quickly. When I make these wonderful little delights, I always double the recipe.

These little cookies go perfectly as a snack or after dinner treat. They are a fun little addition to a family get together, or yes even that special Sunday Dinner with the family.

No bake Coconut Pecan Praline Cookies

Ingredients

2 cups pecans

2 cups sweetened shredded coconut

1 ½ cups sugar

1 cup brown sugar

½ cup evaporated milk

½ cup light corn syrup

½ cup butter

2 teaspoons vanilla

½ teaspoon salt

Instructions:

1. In a saucepan mix brown sugar, sugar, milk, corn syrup and butter. Cook on medium heat stirring constantly.

2. Once the mixture comes to a boil, stir and continue boiling for three minutes.

3. Remove from heat. Add vanilla and salt, mixing well.

4. In a large bowl add coconut and pecans, add the ingredients from the pan and stir well. Mixture will start to thicken.

5. Use a tablespoon or small scoop to form cookies. Place each portion onto baking sheets lined with wax paper.

6. Let cookies cool completely. They will set and be firm.

7. Enjoy!
