A dessert that brings back memories of Sunday dinners

Sunday dinners were always a big to-do in my family. We were all expected to be at Mom’s house every Sunday for this event. My three brothers and me and all our kids.

I was always the dessert maker. Mom cooked the meat and potatoes and, of course, noodles. My sisters-in-law brought side dishes.

Occasionally, Mom would say she felt like smearing up a cake. She didn’t have a recipe, she just threw some things in a bowl and beat it up with the mixer and put it in the oven. One of her favorite cakes was a white cake and she would put a can of cherry pie filling on top, then top it off with cool whip. It was always a nice dessert, even if we ended up having two desserts at the Sunday dinner table. We were all eating both of them.

This week’s recipe is for a white cake. When I got out this recipe it made me think of those Sunday dinners at Mom’s house where we were all together chatting and enjoying Mom’s cooking and making precious memories. It will always remain a very special time for me.

Heavenly White Cake

Ingredients

2 cups flour, sifted,

1 cup sugar

1 cup butter, softened

4 large eggs

1 cup white chocolate chips

2 teaspoons vanilla extract

½ teaspoon baking powder

Pinch of salt

Instructions

1. Preheat oven to 350 degrees, grease a 9×9 baking pan

2. Cream butter and sugar, in a large mixing bowl, until light and fluffy about 3 to 4 minutes

3. Add eggs one at a time to the above mixture, beating well after each addition then add vanilla

4. Combine flour, baking powder, and salt in a separate bowl, stir making sure there isn’t any lumps in the flour.

5. Gradually add dry ingredients to the wet ingredients mixing until well combined.

6. Fold in white chocolate chips

7. Pour batter into the greased baking pan and bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean.

8. Cool completely. You can add icing or cool whip .
