Happy New Year!
A whole new slate to start the year off with.
I know most people start the year with resolutions. I heard on the news this morning the number one resolution for the new year is to lose weight and get in better shape. Most diet and exercise fail because we set unreal expectations for ourselves. Small steps and small changes are what work, slow and steady.
Several years ago, the big thing for the new year was “diet soup.” It was said you can eat all you want and lose weight. I don’t know about all that, but I found that recipe and tried it. It’s really good.
The only issue is that there’s no protein in it. So, when I make it, I usually serve toasted cheese or a lunch meat sandwich with it.
I love the flavor of this soup. Warm, comforting and the flavors make it a perfect winter soup. The bonus is it’s fat free and it is “low calories.”
“Diet Soup”
3-1/4 Carrots, chopped
2 onions chopped
1 16 ounce can of diced tomatoes with liquid
5/8 large head of cabbage, chopped
1 ounce envelope of dry onion soup mix
1-15 ounce can of cut green beans drained
5 1/3 cups tomato juice
1 ¼ green peppers diced.
6 ¾ stalks of celery, chopped.
1-14 ounce can of beef broth
Directions
Place carrots, onions, tomatoes, cabbage, green beans, peppers, and celery in a large pot. Add onion soup mix, tomato juice, beef broth and enough water to cover vegetables. Simmer until vegetables are tender. May be stored in the refrigerator for several days.
